South Florida Sun Sentinel - Tap water returns to the menu

When the U.S. Conference of Mayors meets this weekend in Miami, good old-fashioned tap water will be on the agenda and hopefully in pitchers and glasses.

On Tuesday, the mayors will vote on a resolution to cancel their bottled water contracts. The cities of San Francisco, Seattle and Boston have already signed on. So have many restaurants across the country.

Organized by a group called Think Outside the Bottle, thousands of people across the country have already given up plastic water bottles, which not only pollute the environment but also weaken public water systems.

"The really amazing thing is the power of the bottled water industry marketing strategy," says spokeswoman Sara Joseph. "These marketing strategies have convinced us that bottled water is better and cast a shadow of doubt on our public water systems."

This morning in Miami, Chef Jonathan Eismann (Pacific Time) and Chef Kenneth Lyon (Fratelli Lyon) will announce that they are giving up bottled water service in their Miami Design District restaurants. They'll be able to post Think Outside The Bottle-certifed stickers on their doors.
